Un vaso de sangría por favor...

If you're a fan of fresh fruit and a little white wine, then you'll enjoy this.  I'm very fond of a little Sangria every now and again.  Something about all that fresh fruit submerged in yummy goodness that keeps me coming back again, especially on a hot summers day and that's exactly what Melbourne is experiencing at the moment.  Hot days!  Summer has well and truly arrived.

I needed to take a few little bits and pieces along with me for New Years Eve, but with no air-conditioning in my home there was no way my oven was being switched on for any length of time.   What to take?  I wanted something quick and easy (that didn't take up too much brain power as I don't function well in the heat), and something fresh and light......Sangria Blanca.....perfecto!

To be honest, I would normally drink the more traditional red Sangria over the white one, but with the temperature hitting 39 degrees......a fresh, sparkling white one was the only choice.

The recipe below is loosely based on the one found in Valli Little's cookbook - More Please.  I've changed it here and there to suit my taste buds (I'm not a fan of vodka and I don't like my Sangria too sweet) so feel free to change it yourself to suit yours.

1 bottle dry white wine mixed with 1/4 cup caster sugar - stir until sugar has dissolved.  Add any fruit of your liking (I added sliced orange, peach, raspberries and some mint leaves).  Stir in 1 cup of gin (or vodka or schnapps) and allow to stand and infuse for approximately 2 hours at room temperature.
When serving, I pour this mixture into a large glass jug and add icy cold mineral water and ice.

Salud!
