A lazy Sunday morning.



One of the lovely things I'm finding about not having a car on the weekends is that I'm forced to slow down.  Something I've been craving and wanting to do for a very long time.


Giving me time to enjoy a lazy brunch of apple pancakes topped with maple syrup and yoghurt along with a big pot of tea.


125g flour
1 tsp baking powder
1 tbsp of caster sugar
1 egg, lightly beaten
1 cup of milk
1 apple, coarsely grated

Mix flour, baking powder and sugar in a bowl, then add the egg, milk and apple and whisk to combine.
Place heaped tablespoonfuls of the batter onto a lightly greased fry pan over medium heat and cook for approximately 2 minutes each side.
Serve with maple syrup and yoghurt.
Makes 8



Geez, I could sure get use to this!
